What can I cook thats fast for dinner every night? And not frozen things?

Mathew, when I had my own pad, I got myself a wok and I did stir fries. Had chicken or veal already crumbed, and a side salad that did me. You can crumb the meat in the morning place it in a Ziploc in the fridge and cook it when you get home. You don't have to be a genius to whip up a quick salad. I used to love marinating chicken wings in the morning, come home and place them on dish, and grill them awesome man. There are heaps of quickie meals if you use your imagination.
It is a pity you don't like frozen foods as they are the best and the fastest to cook. Grab 2-3 sausages per head and put them into a pot of water and bring up to the boil and reduce the heat to a simmer. Bring another pot of water up to the boil and add a cup of peas, beans corn butter beans etc and let then come up to the boil. If it was me I would peel potatoes straight away and get them on. By the time the rest of the foods have been gotten out and cooked , the potatoes will be ready to be mashed. That will save you all of that prep time to do the veges. I generally allow 30 minutes prep time and 30 minutes cooking time Try at nights when you are preparing dinner to get the meat out for the following nights In terms of fresh foods I have are cabbage, carrots, leeks, parsnips etc and as it is just for me I buy limited amounts so I am not stuck with the same things night after night and I can have a good variety. I suggest you revisit the frozen concept as that will be a lot healthier than some of the packet or canned foods that will probably be suggest here. H-man
Any meat, pan fried or broiled: steak, pork chops, ham steak, chicken breasts. Served with rice. Or potatoes. Buy one of those microwave 'potato bags' that cook a baked potato in 5 minutes .. much better than just sticking one bare into the mw. Or mac n cheese. Spaghetti with spaghetti sauce, with ground beef in it and a salad on the side. Soup and sandwich. Tacos Pyrogies with sour cream and bacon and onion Stir fries ... veggies and meat quickly cooked up, and served with rice or with rice noodles or any type of Asian noodles. Buy a slow cooker and put your meal into it to slow cook over the day, so it is hot and ready for you when you get home. Especially good for stews of any sort. I make a supper on Sunday night for the week, enough to eat leftovers for 3 days (M, Tu. W) . That leaves Th and F for a quick meal.
Get disposable cups from Zip-Loc, Rubbermaid, or other brand. Cheap ones from the dollar store work just fine. Get a few dozen because they tend to shrink. If you get more later, they wont fit each other. STEW 1 lb stew beef 1 lb mixed veggies 2 cans diced potatoes 2 cans cream of mushroom soup 1/2 tsp salt 1/2 tsp black pepper or to taste 1/2 cup dried minced onion 1/2 tsp garlic powder water to cover Put all in a slow cooker on low heat in the morning. In the evening spoon the stew into cups and refrigerate. You can nuke a cup any time you get hungry. RICE PUDDING 2 cups water 1/4 tsp salt 1/2 cup basmati or other brand aromatic rice 1 TBSP butter 3/4 cup sugar 1 cup instant powdered milk 1 TBSP vanilla extract (Because I like a lot of vanilla flavor!) 6 eggs 4 cups whole milk 1/2 cup raisins (optional) Saigon cinnamon Oven to 300 F. Boil the water and salt. Add the rice slowly so boiling does not stop. Cover and reduce heat. Simmer the rice for 20 minutes, stirring occasionally. Let the pan set covered until the last of the water is absorbed. Coat a 9 x 13 pan by rubbing with 1 TBSP butter. Mix all the rest of the ingredients except raisins. Put the rice in the pan and fold in the raisins. Pour in the mixture and stir gently. Bake at 300F for one hour. If the pudding is not set in the center you can turn off the heat and leave it in the oven while it cools. Divide the pudding into 15 squares and put one square into each cup. Sprinkle with cinnamon. Close and refrigerate. NOTE: Cinnamon used to come from Viet Nam and it was wonderful stuff. But all the trees were killed in the war. That is why there is no good cinnamon any more. They are trying to start groves in other countries, but the soil just isn't right in most places. Try different brands to see what you like. Saigon cinnamon is noticeably better than no-name cinnamon.
I fix a few of the following on the weekend. A large crockpot lasts a few days. The baking is simple, don't even look at a recipe now, 15 minutes and a loaf and semi-sweet cake are in the oven. The sauces can be simmered and pasta ready in about an hour, then also are available for several meals. Rick's Chili 6C over-night soaked pinto beans 1C brown rice 1/2 gal filtered water 1T black pepper 1T red pepper flakes Optional: 3 T chili powder 1 T bullion powder cayenne pepper to taste 1T oregano 3T lemon juice or apple vinegar Garlic Diced onion Bell pepper Jalapenos, fresh or pickled Grated carrots Honey or pure maple syrup 1/2 can tomato sauce Basic bread/pancake/pizza: 2 cups whole grain flour 2 tsp baking soda 1 Tbs apple vinegar A pinch of seasalt and sweetener optional Options: garlic, onion, olives, black pepper, hot peppers, rosemary, basil, oregano Also used for piecrusts, cinnamon rolls, sweet breads & cakes Sweet breads: banana, other fruits, grated carrots, zucchini, spices: cinnamon, nutmeg, all spice Sweeteners: molasses, local honey, stevia Simple red-marinara sauce: 1can tomato sauce, 1Tbsp oregano, 1Tbsp basil, garlic, onion. Simmer 30 minutes. Optional: rosemary, bay leaves, sliced olives. These other spices can be added to the white sauce too. Fresh basil is amazing, along with fresh garlic after cooking. Simple white sauce: water with flour to thicken it, flour must be dissolved in cold water and stirred in before it forms lumps. Bullion can be added for gravy. Or Parmesan cheese, basil, and a touch of olive oil for pasta & pizza sauce. seasalt & pepper to taste. Greek/Pico Salad 2 cup diced tomato 1 cup finely diced onion 1/2 cup finely sliced fresh cilantro 2 tbs lime/lemon juice fresh black pepper Optional 1 cup diced avocados 2 cups broccoli, cabbage, shredded-carrots, cucumbers, bell peppers 1/4 cup peperoncini, fresh jalapenos 2 teaspoons fresh garlic, minced touch of honey Can be added to lettuce prior to eating, do not store with lettuce in it Hope these help.
You can throw a bunch of stuff in a slow cooker in the morning before you leave, that way dinner is already done when you get home. Otherwise, a stir fry is pretty quick and easy
